Melt the Chocolate
In a heatproof bowl, melt the dark chocolate and unsalted butter together over a simmering pot of water (double boiler method), stirring until smooth. Remove from heat and allow to cool slightly.

Whip the Egg Yolks
In a separate bowl, whisk the egg yolks and half of the granulated sugar together until pale and creamy. Gradually mix in the melted chocolate mixture until well combined.

Fold Mixtures Together
Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Add the vanilla extract and fold gently into the chocolate mixture until fully incorporated.

Chill the Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.
