To Prepare the Burrata Pop Tart

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add cold water until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

    Prepare the Fennel-Sweet Onion Jam

    In a skillet over medium heat, add the chopped fennel and sweet onion. Sauté until softened, about 8-10 minutes. Add the brown sugar, balsamic vinegar, and thyme. Cook until the mixture thickens and becomes jam-like, about 10 minutes. Let cool.

    Assemble the Pop Tart

    Preheat your oven to 400°F (200°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into rectangles. Place half of the rectangles on a baking sheet. Spread a portion of the fennel-sweet onion jam on each rectangle, then top with burrata cheese. Cover with the remaining rectangles and seal the edges with a fork.

    Bake

    Brush the tops of the pop tarts with the beaten egg. Bake in the preheated oven for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
