Prepare the Turkey Confit

Season the Turkey
Rub turkey thighs with a generous amount of salt, crushed garlic, fresh thyme, and black pepper. Let it rest in the refrigerator overnight or for at least 12 hours.

Shred the Turkey
Once cooked, let the turkey cool slightly, then shred the meat into bite-sized pieces. Set aside for assembling the buns.

Mix the Stuffing
In a large bowl, combine cubed stale bread, sautéed vegetables, chopped herbs such as sage and parsley, salt, and pepper. Pour in chicken stock gradually while mixing until the bread is moistened but not soggy.

Bake the Stuffing
Transfer the stuffing to a greased baking dish. Cover with foil and bake in a 350°F (175°C) oven for 25 minutes. Uncover and bake another 10–15 minutes until golden brown. Let it cool and cut into small serving portions.
Make the Red Currant Sauce

Cook the Sauce
In a small saucepan, combine red currant jelly, a splash of red wine vinegar, a pinch of salt, and a splash of water. Simmer over low heat for 5–10 minutes, stirring until smooth and slightly thickened. Set aside to cool.
Prepare the Bao Buns

In a large bowl, combine flour, sugar, instant yeast, baking powder, warm milk, and a pinch of salt. Mix to form a dough, then knead until smooth and elastic, about 10 minutes.

Cover the dough with a damp cloth and let it rise in a warm place until doubled in size, about 1 hour.

Shape and Steam Buns
Divide the dough into small balls, roll each into an oval, fold in half, and place on parchment squares. Let rest 15 minutes. Steam in a bamboo or regular steamer over boiling water for 10–12 minutes until puffed and cooked through.
Assemble the Bobbie Bao Bun

Fill the Buns
Gently open each steamed bao bun. Place a small piece of stuffing inside, followed by a portion of shredded turkey confit.

Add a spoonful of red currant sauce over the filling for a sweet-tart finish.
