Prepare the Filling
In a skillet, heat sesame oil over medium heat. Add ginger and garlic, sauté for a minute until fragrant. Add black fungus, carrots, cabbage, dried bean curd, and vermicelli. Stir-fry for about 5 minutes until the vegetables are tender. Add soy sauce, salt, and black pepper to taste. Mix well and remove from heat. Allow the filling to cool.
Make the Bao Dough
In a large bowl, combine flour, yeast, sugar, and salt. Gradually add warm water and knead until a smooth dough forms. Cover and let it rise in a warm place for about 1 hour or until doubled in size.
Assemble the Buns
Once the dough has risen, punch it down and divide it into small pieces (about 40g each). Roll each piece into a circle, place a spoonful of filling in the center, and fold the edges over to seal. Pinch to secure the top.
Steam the Buns
Prepare a steamer lined with parchment paper. Place the buns in the steamer, ensuring they have space to expand. Steam for about 15-20 minutes over boiling water until fluffy and cooked through.
Serve
Remove the buns from the steamer and allow them to cool slightly before serving. Enjoy warm!
