Prepare the Ingredients

Cut the beef into chunks, slice the Korean radish into thin pieces, and chop the cilantro roughly. Mince the garlic and slice the ginger.

Sear the Beef

In a large pot, heat the sesame oil over medium-high heat. Add the beef chunks and sear them on all sides until browned. Remove the beef and set aside.

Sauté Aromatics

In the same pot, add the minced garlic, sliced ginger, and quartered onion. Sauté until fragrant and the onion is translucent.

Add Water and Beef

Return the seared beef to the pot and add the 6 cups of water. Bring to a boil, then reduce the heat to low and let it simmer for about 1.5 hours, or until the beef is tender.

Incorporate Radish and Seasonings

Add the sliced Korean radish, soy sauce, salt, and black pepper to the pot. Continue to simmer for another 30 minutes.

Finish and Serve

Once the radish is tender and the flavors have melded, stir in the chopped cilantro. Adjust seasoning with more salt or pepper if needed. Serve hot.
