Pudding Preparation
Prepare the Avocados
Cut the ripe avocados in half, remove the pit, and scoop the flesh into a blender.
Add Passion Fruit
Scoop the passion fruit pulp into the blender with the avocado.
Sweeten the Mixture
Add honey or maple syrup and vanilla extract to the blender.
Blend the Ingredients
Pour in the coconut milk and blend all the ingredients until smooth and creamy. Scrape down the sides as necessary to ensure everything is well combined.
Chill the Pudding
Transfer the pudding mixture to a bowl or individual serving cups and refrigerate for at least 30 minutes to allow it to set.
Garnishing
Prepare Chia Seeds
In a small bowl, mix chia seeds with a little water (about 1-2 tsp) to help them swell. Let them sit for about 10 minutes.
Garnish the Pudding
Once the pudding is set, top each serving with a tablespoon of chia seeds, a drizzle of extra passion fruit pulp, and a mint leaf for decoration.
