Sambusa Dough Preparation

Mix the Dough

In a large bowl, combine the all-purpose flour and salt. Gradually add the water and vegetable oil, mixing until a smooth dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 5 minutes until it is elastic and smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

Marinate the Chicken

In a medium bowl, combine the diced chicken, onion, garlic, ginger, cumin, coriander, paprika, salt, black pepper, cilantro, and lemon juice. Mix well and let marinate for at least 15 minutes.

Cook the Filling

In a skillet over medium heat, cook the marinated chicken mixture for about 10-12 minutes until the chicken is cooked through and no longer pink. Remove from heat and let it cool.

Combine Sauce Ingredients

In a small bowl, mix together the tomato sauce, hot sauce, garlic powder, cilantro, and sugar. Stir until well combined and set aside.

Assembling and Frying Sambusas

Roll Out the Dough

Divide the dough into small balls. On a floured surface, roll each ball into a thin circle, about 6 inches in diameter.

Fill the Dough

Place a tablespoon of the chicken filling in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges to seal.

Heat the Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

Fry the Sambusas

Carefully add the sambusas to the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
