Beef Preparation
Season the Beef
In a large bowl, season the cubed beef chuck with salt and black pepper. Mix well to ensure all pieces are coated.
Sear the Beef
In a large pot, heat the vegetable oil over medium-high heat. Add the seasoned beef and sear until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
Sauce Preparation
Add Tomatoes and Beef
Stir in the crushed tomatoes and tomato paste, mixing well. Cook for 10 minutes to allow the flavors to meld. Return the seared beef to the pot.
Simmer
Pour in the beef broth and add the bay leaves. Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 1.5 to 2 hours, or until the beef is tender and the sauce has thickened. Stir occasionally and check the seasoning, adding more salt and pepper if necessary.
Finish and Garnish
Once the beef is tender, remove the bay leaves and stir in the chopped cilantro. Adjust seasoning if needed.

Serve the Dish
Serve the tender beef in ripened tomato sauce over a bed of pilau or coconut rice. Garnish with additional cilantro if desired.
