Fried Plantains

Prepare the Plantains

Peel the ripe plantains and cut them into diagonal slices, about 1 inch thick.

Heat the Oil

In a large frying pan, heat the vegetable oil over medium heat until hot.

Fry the Plantains

Add the sliced plantains to the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.

Drain and Season

Remove the fried plantains from the oil and place them on paper towels to drain. Sprinkle with salt to taste.

Sauté the Aromatics

In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

Add Garlic and Tomato

Stir in minced garlic and chopped tomato, cooking for an additional 3 minutes until the tomato softens.

Season the Mixture

Add the cooked yellow beans, cumin powder, salt, and black pepper. Stir well to combine.

Simmer

Let the mixture simmer on low heat for about 10 minutes, allowing the flavors to meld together.

Rice Pilaf or Coconut Rice

Rinse the Rice

Rinse the rice under cold water until the water runs clear to remove excess starch.

Cook the Rice

In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce to a simmer and cover. Cook for 15-20 minutes until the rice is tender.

Prepare Coconut Rice (if chosen)

If making coconut rice, replace water with coconut milk and add spices (cinnamon, cardamom, cloves) before cooking.

Fluff and Serve

Once the rice is cooked, fluff it with a fork and serve alongside the fried plantains and stewed yellow beans.
