Method
Spinach Preparation
Sauté Spinach
In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced onion, and sauté until the onion becomes translucent.
Add Spinach
Add the fresh spinach to the skillet and cook until wilted, which should take about 3-4 minutes. Season with salt and black pepper to taste.
Spiced Rice Pilau Preparation
Rinse Rice
Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.
Toast Spices
In a large pot, heat a tablespoon of oil over medium heat. Add cumin seeds, cinnamon stick, and cardamom pods. Toast for 1-2 minutes until fragrant.
Cook Rice
Add the rinsed rice to the pot and stir to coat the grains in the oil and spices. Pour in the vegetable broth and add salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Coconut Rice Preparation (alternative)
Combine Ingredients
In a medium pot, combine the basmati rice, coconut milk, water, and salt. Stir to combine.
Cook Coconut Rice
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
