Cooking the Pasta
- 1
Boil the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Preparing the Vegetables
- 2
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add diced bell peppers, zucchini, carrots, and broccoli, and sauté for 5-7 minutes until vegetables are tender but still crisp.
- 3
Add Cherry Tomatoes
Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they soften slightly.
Combining Ingredients
- 4
Mix Pasta and Sauce
Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine. If the mixture seems dry, add some reserved pasta water a little at a time until you reach desired consistency.
- 5
Season and Serve
Season with salt and black pepper to taste. Stir in grated Parmesan cheese and chopped fresh basil just before serving. Serve hot.
