Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

Form the crust
Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and let it cool.

Prepare the filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add sugar while continuing to mix until well combined.

Incorporate the remaining ingredients
Add sour cream and vanilla extract to the cream cheese mixture and mix until fully incorporated. Finally, add the eggs one at a time, mixing just until blended. Avoid overmixing.

Combine filling and crust
Pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake the cheesecake
Bake in the oven at 350°F (175°C) for 50-60 minutes or until the center is set but still slightly jiggly. The edges should be firm.

Cool and chill
Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour. Remove from oven and refrigerate for at least 4 hours, preferably overnight, before serving.
