Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsalted butter and semisweet chocolate. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until the mixture is pale and slightly thickened. Add the vanilla extract and mix to combine.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture, stirring gently to combine. Be careful not to overmix.

  5. 5

    Add Flour and Salt

Sift the all-purpose flour and salt into the chocolate mixture, folding gently until just combined.

Baking

  1. 6

    Fill Ramekins

Evenly divide the batter among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool Slightly

Remove from the oven and let the ramekins cool for 1 minute. Carefully run a knife around the edges to loosen the cakes.

Serving

  1. 9

    Invert and Serve

Invert each ramekin onto a plate. The cake should release easily. Serve immediately, optionally dusting with powdered sugar and adding a scoop of vanilla ice cream and fresh berries if desired.
