Broth Preparation

Prepare the Broth
In a large pot, combine 4 cups of water, 2 stalks of lemongrass (bruised), 1 inch of galangal (sliced), 4 kaffir lime leaves (torn), 3 tablespoons of fish sauce, 2 tablespoons of lime juice, and 1 tablespoon of chili paste.

Bring to a Simmer
Bring the mixture to a boil over medium heat, then reduce heat to low and let it simmer for about 10-15 minutes to allow the flavors to meld.

Chop the Vegetables
While the broth simmers, chop the tomatoes into wedges, slice the onion, chop the green onions into 1-inch pieces, and slice the mushrooms.

Add Vegetables to Broth
After the broth has simmered, add the chopped tomatoes, sliced onion, chopped green onions, and sliced mushrooms to the pot.

Cook the Soup
Allow the soup to cook for an additional 5-7 minutes until the vegetables are tender but still crisp.

Taste and Adjust
Taste the soup and adjust the seasoning with more fish sauce or lime juice as desired.

Ladle the soup into bowls and serve hot, optionally garnished with additional lime wedges or fresh herbs.
