    Chop Vegetables

    Dice the tomatoes, onion, and mushrooms into bite-sized pieces. Chop the green onions, keeping the white and green parts separate.

    Prepare Lemongrass

    Remove the tough outer layers of the lemongrass stalk and finely chop the tender part.

    Mince Garlic and Ginger

    Mince the garlic cloves and ginger.

Cooking

    Sauté Aromatics

    In a large pot, heat a tablespoon of oil over medium heat. Add the minced garlic, ginger, and the white parts of the green onion. Sauté for about 2 minutes until fragrant.

    Add Vegetables

    Add the chopped tomatoes, onion, and mushrooms to the pot. Cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.

    Combine Broth Ingredients

    Pour in the vegetable broth and coconut milk. Add the chopped lemongrass and lime juice. Stir to combine and bring to a simmer.

    Season the Broth

    Add salt and black pepper to taste. Let the broth simmer for about 15 minutes, allowing the flavors to meld.

    Finish with Green Onions

    Just before serving, stir in the green parts of the green onion. Cook for an additional 2 minutes.
