Preparation of Wings

Clean the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Season the Wings
In a large bowl, season the wings with salt and black pepper. Toss to ensure even coverage.

Coat with Cornstarch
Sprinkle the cornstarch over the seasoned wings and toss until they are evenly coated.
Making the Marinade

In a separate bowl, mix together fish sauce, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and red chili flakes until well combined.

Marinate the Wings
Add the chicken wings to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.
Cooking the Wings

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.

Remove the wings from the marinade and arrange them in a single layer on the wire rack.
