Make the Sweet & Sour Sauce
In a medium bowl, combine the soy sauce, rice vinegar, sugar, and water. Stir until the sugar is dissolved. In a separate small bowl, mix the cornstarch with a little bit of water to create a slurry, then add it to the sauce mixture. Add the minced garlic, ginger, and sesame oil. Mix well to combine all ingredients.

Cook the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the sliced onion and sauté for 2-3 minutes until translucent. Then, add the julienned carrots, bell peppers, and cook for another 3-4 minutes.

Add Remaining Vegetables
Next, add the diced pineapple, diced tomatoes, and sliced cucumbers to the skillet. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.

Add the Sauce
Pour the sweet and sour sauce over the cooked vegetables. Stir well to coat all the vegetables in the sauce and cook for an additional 3-5 minutes until the sauce thickens slightly.

Serve
Once the dish is cooked and the sauce has thickened, remove from heat. Serve warm over rice or quinoa, if desired. Enjoy your Sweet & Sour vegetables!
