Prepare the Noodles
Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions (typically 4-5 minutes) until tender. Drain and rinse under cold water to stop cooking. Set aside.

Chop the Vegetables
While the noodles are cooking, slice the onion thinly and chop the green onions, separating the white and green parts.

Sauté the Onions
In a large pot, heat a tablespoon of oil over medium heat. Add the sliced onions and sauté for about 3-4 minutes until they become translucent.

Add Bean Sprouts
Add the bean sprouts to the pot and cook for an additional 2 minutes, stirring occasionally.

Combine Sauces
Stir in the beef flavor sauce, hoisin sauce, and lime juice into the pot with the vegetables, mixing well to combine.

Gently fold in the cooked rice noodles into the vegetable and sauce mixture, ensuring they are well coated.

Ladle the spicy noodle soup into bowls, garnishing with the chopped green parts of the green onions. Serve hot.
