Preparation of Catfish

Season the Catfish
Rinse the catfish fillets under cold water. Pat them dry with a paper towel. Season both sides with salt and pepper.

Fry the Catfish
In a large frying pan, heat the oil over medium-high heat. Once hot, carefully add the catfish fillets and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the pan and drain on paper towels.

Stir-fry the Ingredients
In the same pan used for frying fish, remove excess oil, leaving about 1 tablespoon. Add shrimp and cook until they turn pink, about 2-3 minutes. Then add shredded pork, mushrooms, julienned ginger, and chopped green onions. Stir-fry all the ingredients for another 2-3 minutes.

Make the Sauce
In a small bowl, mix together soy sauce, oyster sauce, sugar, cornstarch, and water until smooth. Pour the mixture over the stir-fried ingredients in the pan.

Thicken the Sauce
Continue to stir for another 1-2 minutes until the sauce thickens and coats the shrimp and pork mixture.

Serve the Dish
Place the fried catfish on a serving platter and top it with the shrimp and pork mixture. Serve immediately.
