    Cook the Rice

    If you haven't already, cook the jasmine rice according to package instructions. Allow it to cool completely, ideally refrigerating it for a few hours or overnight.

    Prepare the Vegetables

    Dice the pineapple, carrots, and onion. Set aside the peas and chopped green onions for later.

Cooking

    Scramble the Eggs

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and scramble until fully cooked. Remove the eggs from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining vegetable oil and sesame oil. Add the chopped onion and sauté for 2-3 minutes until translucent. Then add the diced carrots and cook for another 2-3 minutes until slightly softened.

    Add Peas and Pineapple

    Stir in the frozen peas and diced pineapple, cooking for an additional 2-3 minutes until heated through.

    Combine Rice and Seasoning

    Add the cooked rice to the skillet. Pour in the gluten-free soy sauce, and sprinkle with salt and black pepper. Stir everything together, ensuring the rice is evenly coated with the sauce.

    Finish with Eggs and Green Onions

    Add the scrambled eggs back into the skillet and mix well. Top with chopped green onions for garnish. Cook for an additional 1-2 minutes to heat through and serve.
