Cook the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the string beans, bell pepper, and carrots. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Make the Curry Sauce
In a mixing bowl, whisk together the coconut milk, peanut butter, red curry paste, soy sauce, brown sugar, lime juice, minced garlic, and grated ginger until smooth and well combined.

Combine and Simmer
Pour the curry sauce over the sautéed vegetables in the skillet. Stir well to coat all the vegetables. Bring to a gentle simmer and let it cook for another 5-10 minutes, stirring occasionally until the sauce thickens.

Garnish and Serve
Once the curry is ready, remove from heat. Serve hot, garnished with chopped cilantro and crushed peanuts on top.
