Peanut Curry Sauce

Prepare Noodles

Cook Rice Noodles
Bring a pot of water to a boil. Add the rice noodles and cook according to the package instructions (usually about 5-7 minutes) until tender. Drain and set aside.
Prepare Vegetables

Chop Carrots and Green Beans
While the noodles are cooking, peel and julienne the carrot into thin strips. Trim the ends off the green beans and cut them into 1-inch pieces.
Make Peanut Curry Sauce

Combine Sauce Ingredients
In a saucepan over medium heat, combine the coconut milk, peanut butter, curry powder, soy sauce, maple syrup, minced garlic, ginger, lime juice, and salt. Stir well to combine.

Simmer Sauce
Bring the mixture to a gentle simmer, stirring occasionally, until heated through and well combined (about 5-10 minutes). Adjust seasoning with red pepper flakes as desired.
Combine and Serve

Combine Noodles and Sauce
In a large mixing bowl, combine the cooked rice noodles, julienned carrots, and green beans. Pour the peanut curry sauce over the noodles and vegetables, tossing to coat evenly.

Serve immediately, garnished with additional red pepper flakes and lime wedges if desired.
