Prepare the Rice
Use leftover cooked jasmine rice or cook fresh rice and allow it to cool for a bit. This helps to prevent clumping.

Cook the Eggs
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and scramble until cooked through. Remove the eggs from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion and sauté for 2-3 minutes until translucent. Then add the diced carrots and cook for another 3-4 minutes. Finally, add the frozen peas and cook for an additional 2 minutes.

Make the Peanut Curry Sauce
In a bowl, mix together the peanut butter, curry powder, soy sauce, coconut milk, and lime juice until well combined. Season with salt and black pepper to taste.

Serve the Fried Rice
Remove the skillet from heat and serve the peanut curry fried rice hot. Garnish with additional lime juice or chopped peanuts if desired.
