    Soak the wide rice noodles in warm water for about 30 minutes until soft, then drain and set aside.

    Prepare the vegetables: cut the broccoli into florets, julienne the carrot, and mince the garlic.

    Beat the eggs in a bowl and set them aside.

Cooking

    Stir-frying the Vegetables

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add the broccoli and carrot to the skillet and stir-fry for 3-4 minutes until tender but still crisp.

    Adding Noodles and Sauce

    Add the soaked and drained rice noodles to the skillet along with the soy sauce, oyster sauce, sugar, and black pepper. Toss everything together to combine and cook for another 2-3 minutes.

    Incorporating Eggs

    Push the noodle mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until fully cooked. Once cooked, mix the eggs into the noodle and vegetable mixture.

    Finishing Touch

    Add the chopped green onions and toss everything to combine well. Stir-fry for an additional minute.
