Soak the Noodles
Soak the rice noodles in warm water for 30 minutes or until they are soft. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together the fish sauce, soy sauce, sugar, and tamarind paste to create the Pad Thai sauce.

Cook the Proteins
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the sliced chicken and cook until no longer pink, about 5 minutes. Add the shrimp and cook until they turn pink, about 3 minutes. Remove the cooked proteins from the skillet and set aside.

Cook the Tofu and Eggs
In the same skillet, add another tablespoon of vegetable oil. Add the cubed fried tofu and stir-fry for about 2 minutes until heated through. Push the tofu to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until just set.

Combine Ingredients
Add the soaked rice noodles, cooked proteins, bean sprouts, and the Pad Thai sauce to the skillet. Toss everything together and stir-fry for about 3-5 minutes until everything is well combined and heated through.

Finish and Serve
Stir in the chopped green onions and remove from heat. Serve hot, topped with crushed peanuts and lemon wedges on the side.
