    Prepare the Vegetables

    Julienne the ginger, slice the mushrooms, chop the water chestnuts, shred the carrots, and slice the onion. Set aside.

Sauce Preparation

    Mix the Sauce

    In a small bowl, combine soy sauce, brown sugar, sesame oil, cornstarch, and water. Stir until the cornstarch and sugar are dissolved and set aside.

Cooking

    Stir-Fry the Vegetables

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the ginger and onion, and sauté for about 2 minutes until fragrant.

    Add Remaining Vegetables

    Add the mushrooms, water chestnuts, and carrots to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

    Add Sauce and Combine

    Pour the prepared sauce over the stir-fried vegetables and stir well to coat. Cook for another 2 minutes until the sauce thickens and everything is heated through.

Serving
