Preparation of Rice

    Cook the Rice

    Rinse jasmine rice under cold water until the water runs clear. In a rice cooker or pot, combine the rinsed rice with 4 cups of water. Cook according to rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes until water is absorbed. Allow to cool completely.

Cooking the Fried Rice

    Sauté Vegetables

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chopped onions and minced garlic, sauté for 2-3 minutes until onions become translucent.

    Add Carrots and Peas

    Stir in the diced carrots and peas, and cook for an additional 3-4 minutes until the vegetables are tender.

    Scramble Eggs

    Push the vegetables to one side of the skillet, add the remaining tablespoon of oil to the empty space, then crack the eggs into the skillet. Scramble the eggs until fully cooked, then mix with the vegetables.

    Combine Rice

    Add the cooled jasmine rice to the skillet, breaking up any clumps. Stir well to combine all ingredients.

    Season the Rice

    Pour in the soy sauce, and season with salt and black pepper to taste. Stir-fry everything together for about 5-7 minutes until heated through and well combined.

    Finish with Green Onions

    Stir in the sliced green onions and cook for another minute. Remove from heat.
