    Prepare the Ingredients

    Begin by gathering all your ingredients. Dice the carrots, chop the onion, and have your peas ready. Make sure the jasmine rice is cooked and cooled for best results.

    Sauté Vegetables

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chopped onion and sauté for about 2-3 minutes until translucent.

    Add Carrots and Peas

    Add the diced carrots and peas to the skillet. Continue to sauté for another 3-4 minutes until the carrots are tender but still crisp.

    Scramble the Eggs

    Push the vegetables to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked, about 2 minutes.

    Combine Rice and Seasoning

    Add the cooked jasmine rice to the skillet, mixing it with the vegetables and scrambled eggs. Pour in the yellow curry powder and soy sauce, then season with salt and black pepper. Stir well to combine all ingredients and heat through, about 3-4 minutes.

    Once everything is well combined and heated through, remove from heat. Serve the curry fried rice hot, garnished with additional soy sauce if desired.
