Prep the Ingredients
Dice the chicken breast or cube the tofu. If using vegetables, chop them into bite-sized pieces. Dice the onion, mince the garlic and ginger, slice the carrots, and dice the celery.
Cooking the Soup

Sauté Aromatics
In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, minced garlic, and ginger. Sauté until the onion is translucent, about 3-4 minutes.

Pour in the Broth
Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to a simmer.

Season the Soup
Add soy sauce, salt, black pepper, and chili flakes. Adjust the spice level according to your preference. For mild, add less chili flakes; for extra hot, add more.

Simmer
Let the soup simmer for about 20-25 minutes, allowing the flavors to meld together.

Garnish and Serve
Once done, remove from heat and garnish with chopped cilantro. Serve hot with bread or over rice if desired.
