Prepare the Protein
Choose either beef or pork. Cut the meat into bite-sized pieces and season with salt and black pepper. Set aside.

Sauté the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the onion and garlic, sauté until translucent, about 3-4 minutes. Then add the carrots and celery, and cook for another 5 minutes.

Brown the Protein
Increase the heat to medium-high. Add the seasoned beef or pork to the pot and brown the meat on all sides, about 5-7 minutes.

Add Liquids and Spices
Pour in the beef or chicken broth and water. Add the cumin, red chili flakes, chili powder, and bay leaf. Bring to a boil, then reduce the heat to low.

Simmer the Soup
Cover the pot and let the soup simmer for 45 minutes to 1 hour, until the meat is tender.

Remove the bay leaf. Stir in fresh parsley. Adjust seasoning if needed and serve hot with lime wedges on the side.
