Preparation

    Chop Vegetables

    Dice the onion, chop the carrots, peas, peapods, and broccoli into small, bite-sized pieces.

    Prepare Rice

    Use day-old cooked Jasmine rice for the best results. If you don't have day-old rice, spread freshly cooked rice on a baking sheet and let it cool for 30 minutes.

Cooking

    Scramble Eggs

    In a large skillet or wok, heat 1 tablespoon of cooking oil over medium heat. Crack the eggs into the skillet and scramble them until fully cooked. Remove the eggs and set aside.

    Stir-Fry Vegetables

    In the same skillet, add the remaining cooking oil. Add the diced onion and cook until translucent, about 3 minutes. Add the carrots, peas, peapods, and broccoli. Stir-fry for another 5 minutes until the vegetables are tender.

    Combine Rice and Seasonings

    Add the cooked rice to the skillet with the vegetables. Pour in the soy sauce, sesame oil, salt, and pepper. Stir well to combine all ingredients.

    Add Scrambled Eggs

    Fold the scrambled eggs back into the rice mixture, stirring until everything is well combined and heated through.
