For the Chicken Sa-tay

    Prepare the Marinade

    In a bowl, combine yellow curry powder, coconut milk, lime juice, minced garlic, grated ginger, and salt. Mix well.

    Marinate the Chicken

    Cut the chicken thighs into bite-sized pieces and add them to the marinade. Make sure the chicken is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Skewer the Chicken

    Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.

    Grill the Chicken

    Preheat the grill to medium-high heat. Grill the skewers for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
