Preparation and Frying

    Prepare the Filling

    In a large bowl, combine ground chicken or mixed vegetables, shredded carrots, bean sprouts, minced garlic, chopped green onions, soy sauce, sesame oil, salt, and pepper. Mix well until fully combined.

    Roll the Spring Rolls

    Place a spring roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the wrapper. Fold the bottom corner over the filling, then fold the sides in, and roll tightly away from you. Seal the edge with a little water. Repeat with remaining wrappers and filling.

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Rolls

    Carefully place the rolls in the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

    Make the Sweet and Sour Sauce

    In a small bowl, mix together sugar, vinegar, ketchup, and water until sugar is dissolved. Adjust seasoning as desired.

    Serve the fried rolls hot with the house-made sweet and sour sauce on the side.
