Prepare the Filling
In a large bowl, combine ground pork (or crumbled tofu for the vegetarian option), finely chopped celery, grated carrots, chopped onion, and grated ginger. Add soy sauce, sesame oil, salt, and ground black pepper. Mix well until all ingredients are combined.

Assemble the Dumplings
Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Dip your finger in water and moisten the edges of the wrapper. Fold the wrapper in half to create a semi-circle and pinch the edges to seal. Make sure there are no air pockets.

Cooking Options
You can choose to either fry or steam the dumplings. For frying, heat a tablespoon of oil in a pan over medium heat, add the dumplings, and fry until golden brown on the bottom. Then, add a few tablespoons of water to the pan and cover to steam for about 5-7 minutes. For steaming, place the dumplings in a steamer basket and steam for about 10-12 minutes.

Serve the dumplings hot with soy sauce or your favorite dipping sauce.
