Preparation Instructions

    Prepare the Noodles

    Cook the vermicelli rice noodles according to package instructions. Drain and rinse under cold water. Set aside.

    Prepare the Cucumber

    Julienne or thinly slice the cucumber into strips.

    Prepare the Protein

    If using tofu, shrimp, or chicken, cook the protein according to your preference and allow it to cool. Slice into strips.

    Assemble the Spring Rolls

    Soak the rice paper wrappers in warm water for about 10-15 seconds until pliable. Lay the wrapper flat and place a lettuce leaf down, followed by a small amount of vermicelli noodles, a few mint and basil leaves, cucumber strips, and your cooked protein.

    Roll the Spring Rolls

    Fold the sides of the rice paper wrapper inwards and then roll from the bottom up to encase the filling. Repeat for all wrappers.

    Serve

    Serve the spring rolls with hoisin and peanut sauce on the side for dipping.
