Prepare the Filling
Boil the potatoes until tender, then peel and mash them in a bowl. In a pan, heat a tablespoon of oil and sauté the chopped onion until translucent. Add the carrots, peas, and yellow curry powder. Cook for about 5 minutes. Combine the sautéed mixture with the mashed potatoes, and add salt to taste. Allow the filling to cool.

Make the Dough
In a mixing bowl, combine 2 cups of all-purpose flour with a pinch of salt. Gradually add water to form a soft dough. Knead for about 5 minutes, then cover with a damp cloth and let it rest for 30 minutes.

Assemble the Samosas
Divide the dough into small balls. Roll each ball into a thin oval, then cut it in half to form two semicircles. Take one semicircle, fold it into a cone shape, and seal the edge with a little water. Fill the cone with the cooled filling and seal the open edge by pinching it tightly.

Fry the Samosas
In a deep pan, heat oil over medium heat. Once hot, carefully add the samosas in batches, frying them until golden brown on all sides. Remove with a slotted spoon and drain on paper towels.

Serve the hot samosas with house-made sweet and sour sauce.
