Prepare the Ginger
Peel and finely grate the ginger root. Place it in a large bowl.

Mix Ingredients
Add granulated sugar and fresh lemon juice to the grated ginger. Mix well until the sugar dissolves.

Add Water
Pour in the filtered water and stir the mixture thoroughly to combine all ingredients.

Activate Yeast
In a small bowl, dissolve the active dry yeast in a little warm water (about 1/4 cup). Let it sit for about 10 minutes until foamy.

Combine and Ferment
Add the foamy yeast mixture to the ginger mixture and stir well. Cover the bowl with a clean cloth and let it sit at room temperature for 24 to 48 hours, depending on desired fermentation level.

Bottle the Ginger Beer
After fermentation, strain the mixture through a fine mesh sieve into clean bottles, leaving some space at the top. Add lemon slices to each bottle to taste.
