Thai Iced Tea or Thai Iced Coffee

Making Thai Iced Tea
In a pot, bring 2 cups of water to a boil. Add 2 tablespoons of Thai black tea leaves and steep for about 5 minutes. Strain the tea into a pitcher, add 3 tablespoons of sugar, and stir until dissolved. Let it cool, then serve over ice with 1 tablespoon of condensed milk.

Making Thai Iced Coffee
In a separate pot, brew 2 tablespoons of coffee grounds with 2 cups of water. Add sugar to taste. Once brewed, serve over ice and top with 1 tablespoon of coconut milk if desired.

Preparing Thom Yum
In a saucepan, bring 2 cups of chicken or vegetable broth to a boil. Stir in 2 tablespoons of Tom Yum paste. Add 1 cup of sliced mushrooms and simmer for about 5 minutes. Finish with 2 tablespoons of lime juice and garnish with chopped cilantro.
