    Prepare the Filling

    In a large bowl, combine the ground chicken or mixed vegetables, shredded carrot, chopped cabbage, green onions, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

    Roll the Spring Rolls

    Take a spring roll wrapper and place it on a clean surface with one corner pointing towards you. Spoon 2 tablespoons of the filling onto the wrapper, fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a little water. Repeat with the remaining wrappers and filling.

    Fry the Rolls

    In a deep frying pan, heat oil over medium-high heat. Once hot, carefully add the rolls in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve

    Serve the fried rolls hot with house-made sweet and sour sauce on the side for dipping.
