Prepare the Filling
In a large bowl, combine ground pork (or crumbled tofu for the vegetarian version), chopped celery, grated carrots, chopped onions, and grated ginger. Add soy sauce, sesame oil, salt, and black pepper. Mix well until fully combined.

Assemble the Dumplings
Take a dumpling wrapper and place about a tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half, and press to seal. You can also pleat the edges for a decorative touch.

Cooking the Dumplings
To fry: Heat a non-stick skillet over medium heat with a little oil. Arrange the dumplings in the skillet and fry until the bottoms are golden brown, about 3-4 minutes. Add a little water (about 1/4 cup), cover, and let steam for another 5-6 minutes. To steam: Place the dumplings in a bamboo steamer lined with parchment paper and steam over boiling water for about 10-12 minutes.
