    In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.

    Add Mushrooms

    Add sliced mushrooms to the pot and cook until they release their moisture, about 3-4 minutes.

    Add Zucchini and Tomatoes

    Stir in the diced zucchini and tomatoes, cooking for another 5 minutes until the zucchini is slightly tender.

    Incorporate Thai Spices

    Mix in the minced lemongrass, galangal, red chili flakes, salt, and black pepper. Stir well to combine.

    Add Broth and Simmer

    Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If desired, blend partially for a chunkier texture.

    Adjust Seasoning

    Taste the soup and adjust seasoning with more salt, pepper, or chili flakes if necessary.
