    Prepare the Broth

    In a large pot, bring 4 cups of water to a boil. Add the bruised lemongrass and sliced galangal. Simmer for about 10 minutes to infuse the flavors.

    Add Vegetables

    Add the sliced onions, mushrooms, tomatoes, and zucchini to the pot. Cook for another 5 minutes until the vegetables are tender.

    Cook Shrimp and Squid

    Add the shrimp and squid to the pot and cook for 3-4 minutes until the shrimp is pink and the squid is cooked through.

    Season the Soup

    Stir in the fish sauce, lime juice, and Thai chili paste. Adjust seasoning to taste.

    Garnish and Serve

    Remove from heat and discard the lemongrass and galangal. Serve hot, garnished with cilantro, green onions, and lime wedges. If desired, add cooked noodles.
