    Reduce heat to medium. Stir in the green, red, and Masaman curry pastes, cooking for 2-3 minutes until fragrant.

    Incorporate Coconut Milk

    Pour in the coconut milk, stirring to combine. Bring the mixture to a gentle simmer.

    Add the sliced bamboo shoots, carrots, and sweet peas to the pot. Stir well to combine.
