Brown the Pork
In a large pot, heat the vegetable oil over medium-high heat. Add the cubed pork and season with salt and black pepper. Brown the pork on all sides for about 5-7 minutes.

Add Curry Pastes
Stir in the green curry paste, red curry paste, and Massaman curry paste. Cook for another 2-3 minutes until the pastes are fragrant.

Add Coconut Milk
Pour in the coconut milk and bring the mixture to a gentle simmer. Reduce the heat to low and cover the pot. Let it cook for about 30 minutes.

Add Vegetables
After 30 minutes, add the sliced bamboo shoots, carrots, and sweet peas. Stir to combine and continue to simmer for an additional 10-15 minutes until the vegetables are tender.

Final Seasoning
Taste and adjust seasoning with more salt and black pepper if needed. Stir in the chopped cilantro just before serving.
