    Prepare the Vegetables

    Wash and chop the green bell peppers, julienne the carrots, slice the onion, and prepare the bamboo shoots.

    Make the Sauce

    In a bowl, mix 3 tablespoons of Sriracha, 2 tablespoons of soy sauce, 1 tablespoon of honey, and 1 tablespoon of rice vinegar. Stir well to combine.

    Stir-Fry the Vegetables

    In a large pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the onions and stir-fry for 2 minutes until they start to soften.

    Add Remaining Vegetables

    Add the green bell peppers, carrots, and bamboo shoots to the pan. Stir-fry for another 4-5 minutes until the vegetables are tender-crisp.

    Combine with Sauce

    Pour the prepared sauce over the stir-fried vegetables. Toss everything together and cook for an additional 2 minutes until heated through.
