    Prepare the Pork

    Thinly slice the pork loin and tenderize it using a meat mallet. Set aside.

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, chili powder, garlic powder, salt, and black pepper. In another bowl, whisk together eggs and water. Gradually add the wet ingredients to the dry ingredients until well combined.

    Heat the Oil

    In a deep frying pan or wok, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Pork

    Dip the tenderized pork slices into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry for about 3-4 minutes or until golden brown. Remove and drain on paper towels.

    Stir-fry the Vegetables

    In a separate pan, stir-fry the mixed vegetables over medium heat for about 5-7 minutes until tender-crisp.

    Plate the fried pork, add the stir-fried veggies on the side, and drizzle with sweet and sour sauce.
