    Prepare the Vegetables

    Wash and chop the green bell pepper, onion, carrots, zucchini, and tomatoes into bite-sized pieces.

    Make the Sauce

    In a separate bowl, mix together soy sauce, ketchup, brown sugar, rice vinegar, minced garlic, salt, and black pepper until well combined.

    Stir-fry the Vegetables

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chopped onion and carrots, and stir-fry for about 3 minutes.

    Add Remaining Vegetables

    Add the green bell pepper, zucchini, and tomatoes to the skillet. Stir-fry for another 4-5 minutes until the vegetables are tender-crisp.

    Combine with Sauce

    Pour the prepared sweet and sour sauce over the stir-fried vegetables. Stir well to coat all the vegetables with the sauce and cook for an additional 2 minutes.

    Serve

    Remove from heat and serve hot over rice or noodles.
