Prepare the Noodles
Soak the rice noodles in warm water for about 20-30 minutes until softened. Drain and set aside.

Cook the Tofu (if using)
If making the tofu version, cube the tofu and sauté it in a pan with 1 tablespoon of vegetable oil until golden brown. Remove from the pan and set aside.

Sauté Vegetables
In the same pan, heat the remaining tablespoon of vegetable oil over medium heat. Add the diced onion and shredded cabbage, and sauté until softened (about 3-4 minutes).

Add Noodles and Sauce
Add the softened rice noodles to the pan along with the soy sauce, tamarind paste, sugar, and salt. Toss everything together until the noodles are well coated.

Final Touch
Stir in the bean sprouts and sauté for another 1-2 minutes. If using tofu, add it back into the pan at this stage. Remove from heat.

Serve
Garnish with chopped peanuts, sliced green onion, and lime wedges. Serve hot.
