    Prepare the Noodles

    Soak the wide rice noodles in warm water for about 30 minutes until softened. Drain and set aside.

    Cook the Chicken

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry until fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

    Stir-fry the Aromatics

    In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and stir-fry for about 30 seconds until fragrant.

    Add the Eggs

    Crack the eggs into the skillet and scramble them until fully cooked. Push the eggs to one side of the skillet.

    Combine Noodles and Broccoli

    Add the soaked rice noodles and chopped Chinese broccoli to the skillet. Stir everything together.

    Season the Dish

    Pour the soy sauce, dark soy sauce, sugar, and white pepper over the noodles and mix well. Add the cooked chicken back into the skillet and stir-fry for another 2-3 minutes until everything is heated through.
