Cook the Bacon
In a large skillet over medium heat, cook the 8 slices of bacon until crispy, about 8-10 minutes. Once cooked, remove from skillet and drain on paper towels. Crumble the bacon into small pieces once cooled.

Grate the yellow cheddar cheese if using a block. Measure out 1 cup and set aside.

Combine Ingredients
In a mixing bowl, combine the crumbled bacon, onion crispies, grated yellow cheddar cheese, and St. Louis BBQ sauce. Mix until well combined.

Heat the Mixture
Transfer the combined mixture to a baking dish or oven-safe skillet. Preheat your oven to 350°F (175°C) and bake for about 15-20 minutes, until the cheese is bubbly and golden.

Remove from the oven and let it cool slightly before serving. Enjoy as a dip with tortilla chips or as a topping on burgers.
